Shrimps in curry sauce

Shrimps are cooked in curry sauce and served with pineapples fried in honey curry syrup.

Ingredients

  1. Prepare pineapple. Heat butter in a large skillet over medium-high heat. Place pineapple in a preheated skillet, sprinkle with curry and honey, cook, stirring occasionally, for about 3 minutes. Remove the pan from the stove, cover and leave the pineapple until serving.
  2. Heat another large skillet over medium-high heat, brush with vegetable oil. Place the shrimp and cook, stirring occasionally, for about 3 minutes.
  3. In a small bowl, combine coconut milk, sugar, lime juice, curry paste and starch and stir until smooth. Pour this mixture into a frying pan with shrimps, bring to a boil.
  4. Reduce heat, cook, stirring occasionally, until thickened, about 5 minutes. Sprinkle with cilantro.
  5. Serve the shrimp with pineapple and lime wedges. For garnish, you can take boiled rice (optional).
