Shrimps with tomatoes and feta

  1. Peel the shrimp, leaving the tails. Crumble the cheese.
  2. Chop the onion. Chop the garlic. Cut the pepper into 0.5 cm pieces, chop the dill.
  3. Drain the liquid from the tomatoes, setting aside 0.25 cups of juice.
  4. Mix the shrimp, 1.5 teaspoons of oil, 1.5 teaspoons of brandy, a third of the garlic, lemon zest. Season the mixture with salt and pepper.
  5. Heat 1 tbsp. a spoonful of oil. Put onion and pepper in oil, add 1/8 teaspoon of salt, cover and cook for 3-5 minutes. Remove the lid, cook, stirring, for another 3-5 minutes so that the liquid evaporates.
  6. Add garlic, pepper flakes and heat for another 30 seconds.
  7. Add the remaining spoonful of brandy, tomatoes and the delayed juice, pour in the wine. Bring to a boil and cook, stirring occasionally, until thickened. Season with salt and pepper.
  8. Add shrimp, reduce heat to low, cover and cook for 6-9 minutes.
  9. Remove from heat, add feta and dill. Drizzle with the remaining oil.
