Shrimps with zucchini and orzo

The recipe for a delicious and healthy dinner - king prawns garnished with zucchini and orzo pasta.

  1. Peel the shrimp, leaving the tails.
  2. Chop the onion.
  3. In a bowl, combine the vinegar, orange zest, orange juice, onion, olive oil and salt.
  4. Pour the resulting marinade over the shrimp, mix. Put in the refrigerator for 1-4 hours.
  5. Preheat the oven. Remove the shrimp from the marinade. Put the shrimps on a baking sheet, bake for 4-6 minutes at 200 degrees (until the shrimps are cooked).
  6. For the garnish, prepare the orzo according to the instructions on the package, without adding salt or oil. Drain the water.
  7. Cut the tomatoes into halves. Mash the feta with a fork. Chop basil and thyme.
  8. Return the ortso to the pot, add the tomatoes and feta. Top up with orange juice, basil and thyme.
  9. Cut the zucchini lengthwise into halves and then cut into semicircular slices.
  10. Grill the zucchini or bake in the oven until soft. Sprinkle with pepper.
  11. When serving, place the shrimp, orzo and zucchini on each plate.
