Spaghetti with shrimps and avocado

Boiled spaghetti is simmered in shrimp broth for a couple of minutes and then served with avocado and fried shrimp.

  1. Peel the shrimp, remove the streaks on the back. Do not discard the heads and shells. Peel the avocado, cut into slices and drizzle with lemon juice.
  2. In a large saucepan, heat half the olive oil, add the onion, and cook over low heat, stirring occasionally, for about 5 minutes. Place the shrimp shells and heads in the pan, cook, stirring occasionally, for about 5 minutes, then add the wine and the garni bouquet. Bring the mixture to a boil, cook over medium heat for about 20 minutes.
  3. Meanwhile, boil the spaghetti in salted water until tender, according to the instructions on the package.
  4. Get a bouquet of garni from a saucepan, remove. Also remove the shells and heads of the shrimps from the saucepan along with the onions, chop in a kitchen processor and strain through cheesecloth. Pour this broth into a large saucepan, bring to a boil, put spaghetti in the broth, cook for a couple of minutes.
  5. Meanwhile, in a large skillet, heat the remaining olive oil, add the shrimps, cook for about 2-3 minutes, until pink on all sides. Add garlic and cook for about 1 minute. Season the shrimp with salt and pepper to taste. Remove the pan from the stove.
  6. Throw the pasta into a colander, let the broth drain, and then transfer it to a bowl with the avocado, stir. Serve the pasta in portioned bowls and top with the shrimp.
