  1. Remove the shell and longitudinal vein from the shrimp.
  2. Cut the fish into 7.5x5 cm pieces.
  3. Rinse scallops well under running water. Remove hard muscle. Squeeze the lime juice into a large bowl. Mix with coriander. Put shrimps, fish and scallops in the juice. Mix well, set aside.
  4. Heat oil in a large cast iron saucepan over high heat. Add chopped vegetables and cook for about 25 minutes, stirring occasionally.
  5. Place the tomatoes with juice, the next 5 ingredients and 3/4 cup of water. Break the tomatoes with a spoon. Bring to a boil over high heat. Reduce heat to medium and simmer for 5 minutes. Mix seafood with tomato mixture and cook over medium heat for 5-10 minutes.
  6. Serve seafood stew with parsley.
