Stir-fry shrimp with asparagus

In order for the shrimp to retain the maximum of their natural taste and nutrients, they must be quickly fried over maximum heat. Such shrimps are served with asparagus in sauce.

  1. In a small bowl, combine the white portion of the chopped onion, chili sauce, ginger and one teaspoon of sesame oil.
  2. Heat vegetable oil in a large skillet over high heat until smoke appears. Place the shrimps on a hot skillet and fry, stirring occasionally, for about 1 minute. Move the shrimps a little to the edges of the pan and put the sesame mixture in the center, cook by crushing this gruel along the bottom of the pan for about 30 seconds, and then mix with the shrimps. Transfer the fried shrimp to a bowl.
  3. Reduce heat to medium under skillet, add asparagus, add water, cover and cook for about 3 minutes. Remove the lid and cook for a couple of minutes, until the asparagus is soft and crispy. Place the contents of the bowl of shrimp in a skillet with asparagus, add the oyster sauce and cook the asparagus and shrimp, stirring occasionally, until the sauce thickens, about 1 minute. Add the sesame seeds and the remaining 1 teaspoon of sesame oil to the pan. Sprinkle the shrimp with asparagus with the green part of the onion.
