This soup is prepared in pork broth, with the addition of pork fillet and shrimp.

Prepare broth. Soak the squid in cold water for 30 minutes. Then rinse and dry. Soak noodles in cold water for 20 minutes.
Put the pork ribs in a large saucepan, pour 2.5 liters of water, bring to a boil, collect the fat from the surface. Also put the soaked squid and all the other ingredients for the broth in a saucepan. Cover the pan with a lid, simmer the broth over low heat for 1 hour, then collect the fat from the surface and cook the broth without covering the pan for another 1.5 hours. Then strain the broth, taste and salt if necessary. You should get 2 liters of ready-made broth.
Transfer the broth to a wok or other deep skillet and bring to a boil. Put the pork fillet in the broth, reduce the heat, cook the meat for about 25 minutes. Transfer the boiled meat to a plank, cut into pieces. Leave the broth in a frying pan to simmer over low heat.
In a large saucepan, bring water to a boil, drain the noodles and place in boiling water, cook for about 5 minutes. Drain the boiled noodles and place in 4 serving platters.
Put the shrimps in a frying pan with boiling broth, cook for about 1 minute. Place the cooked shrimp with the cooked pork fillet in the noodle bowls. Pour the broth over the contents of the plates, add bean sprouts, green onions, chili, garlic and herbs to each serving. This soup is well served with lime wedges and fish sauce (optional).
