Cut off the top of the tomatoes and gently take out all the pulp with a spoon. Sprinkle the inside of the tomatoes with salt and turn over onto a paper towel.
In a bowl, mix lemon zest with herbs and mayonnaise, season with salt and pepper to taste. Add shrimp, stir.
Fill the tomatoes with shrimp and cover the tomatoes stuffed with the shrimp previously cut off.
Cover a serving plate with lettuce leaves. Put stuffed tomatoes on them, garnish with parsley and lemon (lemon zest). Optionally, it can be served with tomatoes stuffed with shrimps, green peas, radishes, carrots, bean sprouts, etc.
