Cold pasta and seafood salad

  1. Boil the paste in salted water until slightly undercooked, according to the instructions on the package. Throw the finished pasta in a colander, having previously reserved 1/2 cup of liquid from the pan.
  2. Pour 3 tablespoons of reserved water into a separate bowl, add crushed saffron and leave at room temperature for 5 minutes.
  3. Transfer the pasta to a large bowl, sprinkle with 1 tablespoon of lemon juice and 1 tablespoon of olive oil, mix. Leave the paste to cool.
  4. Add mayonnaise, sour cream, green onions, capers, tarragon, dill, sugar, 6 tablespoons of lemon juice and 5 tablespoons of olive oil to a bowl of saffron, add a little salt and pepper, beat well with a fork. Pour pasta with this mixture, add shrimp and celery there, mix well. Cut the crab meat and put it in a bowl with pasta, add the required amount of the reserved liquid, mix well (the pasta should acquire a certain silkiness). Cover and place the seafood pasta salad in the refrigerator for 1-4 hours.
  5. Cover the serving plates with salad leaves and arugula, put the pasta with seafood on them. Sprinkle some dill and green onions on the salad if you wish. Serve seafood pasta salad with lemon wedges.
