The Greek word "saganaki" refers to dishes in which the main ingredient is cheese. Shrimp recipes are very popular now, so we will be making shrimp saganaki. And since we are talking about Greek cuisine, the cheese in the recipe is feta.

  1. Heat half the oil in a saucepan, add the onion and cook for about 8 minutes until tender. Stir in the garlic. After a few seconds, add the tomatoes along with the juice, wine, sugar. Season with salt and pepper to taste. Bring the tomatoes to a boil with a fork, reduce heat and simmer, stirring occasionally, for 30 minutes (until the sauce thickens).
  2. Heat the remaining oil in a skillet, add the shrimp, season with salt, pepper and fry, stirring occasionally, for 5-10 minutes. Place out of the skillet with a slotted spoon.
  3. Toss the shrimp with the sauce. Remove from a saucepan and sprinkle with cheese. Place the saganaki on a preheated grill (or oven) to melt and brown the cheese. Sprinkle the shrimp saganaki with thyme leaves and serve with lettuce and fresh crunchy bread. Bon Appetit!
